Avocado salad

  • 2 avocados
  • 3 tomatoes
  • 1 red onion
  • 1/2 bell pepper, chopped  
  • Juice from 1 lime
  • Fresh basil
  • Salt and black pepper
  • Olive oil
  • 1 small handful nuts, chopped (optional)
Cut the avocados in half lengthwise, remove pit and skin. Cut it into bite sized pieces and put in a bowl and toss a bit of lime juice stirring to make sure all the avocado is coated with lime juice.  (This keeps the avocado from turning brown, while you prepare the other ingredients.) Cut the tomatoes in bite sized pieces and mix them in with the avocado. Peel and dice red onion and add to the avocado.
 
Dressing:
In small bowl, stir salt and black pepper into the lime juice, then whisk in olive oil a little at a time.
 
Pour dressing over avocado mixture. Sprinkle with fresh basil and nuts.
