Tofu vegetable burger

  • 250 ml firm tofu
  • 180 ml oats
  • 1 small onion, chopped
  • 1/4 cup chopped red pepper
  • 1/4 cup grated carrots
  • 1/4 tsp. thyme
  • 1/4 tsp. turmeric
  • Salt and black pepper
  • Olive oil

Drain and mash the tofu, mix in the oats, and set aside. Saute the onion in olive oil over medium heat until tender. Add to the tofu, red pepper,carrots, timian, salt and black pepper. Knead until dough holds together. Use a measuring cup to measure out each burger. Press and shape with hands and place on an oiled cookie sheet. Bake at 175 for 15 min., flip over and bake for 10 more min. Serve patty in a lettuce with quinoa on the side or whole grain buns.
